Cranberry Pear Crunch |
Ingredients: 1 cup fresh cranberries 1 cup chopped peeled pears 1/2 cup granulated sugar 1/2 cup orange juice 1/8 teaspoon crushed cinnamon 1/8 teaspoon ginger 1 tablespoon cornstarch 2 tablespoons water 1/2 cup chopped walnuts 1 cup old-fashioned oats, uncooked 1 cup packed brown sugar 1/2 cup all-purpose flour 1/3 cup butter or margarine whipped topping, thawed Directions: In a large saucepan, combine cranberries, pears, sugar, orange juice and spices. Cook over medium heat for 5 minutes or until cranberry skins pop. Combine cornstarch and water; stir into cranberry mixture. Bring to a boil, stirring constantly. Continue boiling for 1 minute over medium heat, stirring constantly to prevent sticking. Remove from heat; stir in nuts. In a medium bowl, combine oats, brown sugar and flour; cut in margarine until mixture resembles coarse crumbs. Place 1 1/2 cups of oat mixture in bottom of greased 8" square pan. Spread with cranberry mixture; top with remaining oat mixture. Bake at 350 degrees for 45 minutes or until lightly browned and bubbly. Serve warm with whipped topping. |
