Cottage-Cheese Meat Loaf

Ingredients (Note: this recipe can easily be doubled for a larger family):

1 cup small-curd cottage cheese

1 egg, lightly beaten

1/4 cup tomato ketchup

2 tablespoons onion, chopped

1 tablespoon prepared mustard

1/2 cup quick-cooking oats

1 teaspoon salt

1/8 teaspoon crushed black pepper

1 pound ground beef

1/3 cup Parmesan cheese

Directions:

Preheat oven to 350 degrees.

In mixing bowl, combine first 8 ingredients. Add beef and mix well. Press into ungreased 8" square baking pan.

Bake at 350 degrees for 20 minutes. Sprinkle Parmesan cheese on top and bake another 10-15 minutes or until meat is no longer pink. Drain; let stand 10 minutes before cutting.
