Company Salad

Ingredients for gelatin:

2 boxes (6 ounces each) lemon gelatin

 3 cups boiling water

1 can (20 ounces) crushed pineapple, drained

1 1/2 cups miniature marshmallows

3 bananas, cubed

Ingredients for spread:

1 cup pineapple juice

1/2 cup granulated sugar

1 1/2 tablespoons flour

1 egg, at room temperature

1/2 pint whipping cream. whipped

1/2 cup mozzarella cheese, shredded

1/2 cup cheddar cheese, shredded

Directions:

Dissolve gelatin in boiling water. Cool and add drained pineapple, marshmallows, and bananas. Place in a large glass bowl and chill until firm.

In top of double boiler, heat pineapple juice. Combine sugar, flour and egg. Mix with pineapple juice and cook until thick, stirring constantly. Cool and fold in whipped cream. Top with grated cheeses. Chill until firm.
