Coleslaw Deluxe

Ingredients:

1 small head of cabbage

2 tablespoons lemon juice

fresh herbs: chopped parsley, chives, etc.

3/4 cup whipping cream

1/2 teaspoon celery seed

1/2 teaspoon granulated sugar

3/4 teaspoon salt

1/4 teaspoon ground black pepper

1 cup seedless green grapes

1/2 cup finely shredded blanched almonds

2 tomatoes, sliced

Directions:

Remove the core from the cabbage and cut into the thinnest shreds possible. Place in a deep bowl. Add the lemonjuice and herbs and mix well.

In a mixing bowl, beat the whipping cream until stiff. Fold in celery seed, sugar, salt, pepper, grapes, and almonds.

Pour the mixture over the cabbage. Toss quickly until well coated.

Place tomato slices on plate and top with coleslaw. Serve at once.
