Coconut Pecan Triangles |
These rich little triangles will remind you of pecan pie with a touch of coconut. Ingredients: 3/4 cup (1 1/2 sticks) butter, melted 2 cups sifted all-purpose flour 1/2 teaspoon salt 1/4 cup granulated sugar 2 eggs, lightly beaten 1 1/2 cups firmly packed light brown sugar 2 tablespoons all-purpose flour 1 teaspoon vanilla extract 1/2 cup shredded sweetened coconut 1 cup pecans, chopped Directions: Preheat oven to 350 degrees. In medium mixing bowl, combine butter, 2 cups flour, salt and 1/4 cup sugar. Mix well with fork. Press into ungreased 13" x 9" baking dish. Bake at 350 degrees for 20 minutes. While cookie layer bakes, prepare the topping by combining eggs, brown sugar, 2 tablespoons flour , vanilla, coconut and pecans in mixing bowl; mix well. When finished baking, remove cookie layer from oven. Carefully spread mixture evenly over top. Return to oven and bake 15-17 minutes longer or until lightly browned. Cool on wire rack before cutting. Cut into 2" squares and then cut into triangles. Yield: 48 triangels |
