Chocolate Chunk Cookies

Ingredients:

1/2 cup (1 stick) butter, softened

1/2 cup granulated sugar

1/2 cup firmly packed light brown sugar

1 large egg, at room temperature

1/2 teaspoon vanilla extract

3/4 cup all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon soda

1/2 cup rolled oats

1 1/4 cups chocolate chunks

Directions:

Preheat oven to 350 degrees. Lightly grease two large baking sheets.

In a large mixing bowl, combine the butter and both sugars. Beat with a wooden spoon until creamy. Beat in egg and vanilla; set aside.

Sift the flour, salt, baking powder and soda into a small bowl. Add the flour mixture to the butter mixture, beating continuously. Stir in the rolled oats and chocolate chunks.

Spoon tablespoonfuls of the dough, about 2" apart, onto the prepared baking sheets. Bake cookies at 350 degrees for 8-10 minutes or until they are lightly browned. Let cookies cool for 1 minute before transferring them to a wire rack. Repeat with any remaining dough.
