Chicken Salad with Apples & Grapes |
Ingredients: 2 cups cubed cooked chicken (about 3 skinless, boneless breasts) 1 cup red grapes, halved 1 red apple, unpeeled and finely diced 1 package (2 ounces) slivered almonds or crushed pecans 2/3 cup chopped celery 1/2 cup mayonnaise 1 tablespoon honey 1 tablespoon fresh lemon juice Directions: In a medium bowl, combine chicken, grapes, apples, nuts and celery. In another bowl, whisk the mayonnaise, honey, and lemon juice. Pour the dressing over the salad ingredients and mix well; chill before serving. Serve on a bed of lettuce, with a variety of crackers (Ritz, Triscuit, etc.)
