Chicken Lasagna

Ingredients:

1/2 pound cooked lasagna noodles

1/2 pound sliced mozzarella

1/4 cup grated Parmesan cheese

2 1/2 cups diced cooked chicken

1 pack frozen spinach or broccoli (thawed, drained, but not cooked)

1/2 cup butter

1/2 cup flour

1 egg, at room temperature

1/2 teaspoon salt

1/2 teaspoon basil

3 cups chicken broth

2 cups cottage cheese

Directions:

Preheat oven to 375 degrees. In a saucepan, melt the butter. Add flour, salt and basil; stir together. Add chicken broth and cook until thick and bubbles. Add in diced chicken.

In a separate bowl, mix together cottage cheese and egg. Place 1/3 of chicken mixture on the bottom of an ungreased 9" x 13" dish. Top with 1/2 of the noodles, 1/2 of the cottage cheese, 1/2 of the mozzarella, and 1/2 of the spinach/broccoli. Repeat process ending with last 1/3 of the chicken mix on the top. Top with Parmesan cheese.

Bake at 375 degrees for 45 minutes.
