Chicken in Basil Cream

Ingredients:

1/4 cup milk

1/2 cup dry bread crumbs

4 skinless, boneless chicken breasts

3 tablespoons butter

1/2 cup chicken broth

1 cup whipping cream

1 jar pimentos, chopped and drained

1/2 cup parmesan cheese

1/4 cup fresh basil

1/8 teaspoon crushed black pepper

Directions:

Place the milk and bread crumbs in separate shallow bowls. Dip the chicken breasts in the milk and then into the crumbs. In a medium skillet, cook the chicken in butter over medium-high heat for about 10 minutes or until the juices run clear. Remove and keep warm.

Add broth to the skillet and bring to a boil; stir to loosen the browned bits from the pan. Stir in the cream and pimentos and bring to a boil for 1 minute. Reduce heat; add parmesan cheese, basil and pepper. Cook and stir until heated through. Pour over chicken.

Serve over noodles or spaghetti.
