Chicken in a Hurry |
Ingredients: 4 boneless skinless chicken breast halves (6 ounces each) 3 tablespoons butter, softened 3 tablespoons sharp American cheese spread 2 tablespoons chopped green chilies 2 teaspoons dried minced onion 1/4 teaspoon salt 1/4 cup butter, melted 1 cup seasoned bread crumbs sweet-and-sour sauce, optional Directions: Flatten chicken to 1/4" thickness. In a small bowl, combine the butter, cheese spread, chilies, onion and salt. Spread 2 tablespoons on each chicken breast half; roll up and secure with toothpicks. Place butter and bread crumbs in separate shallow bowls. Dip chicken rolls in butter, then coat with crumbs. Place in a greased 8" square microwave-safe dish. Cover and microwave on high for 10 minutes or until chicken juices run clear. Discard toothpicks. Top with sweet-and-sour sauce before serving. |
