Chewy Coconut-Banana Cookies

Ingredients:

1/2 cup peanut butter

3/4 cup butter-flavored shortening

1 cup granulated sugar

1 cup packed brown sugar

3 eggs, at room temperature

1/2 cup mashed ripe banana

1 teaspoon vanilla extract

1/2 teaspoon almond extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon salt

1 cup flaked coconut

Directions:

In a large mixing bowl, cream the peanut butter, shortening, and sugars. Add eggs, one at a time, beating well after each addition. Beat in the banana and extracts.

Combine the flour, baking soda, baking powder, and salt; gradually add to creamed mixture. Stir in coconut.

Drop by heaping teaspoonfuls 2" apart onto lightly greased baking sheets. Bake at 350 degrees for 12-14 minutes or until edges are lightly browned. Remove to wire rack to cool.

Note: This recipe will make about 60 cookies.
