Cashew Scotchies |
Ingredients: 1 1/4 cups all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup (1 stick) butter 1 1/2 cups firmly packed light brown sugar 2 eggs, at room temperature 1 teaspoon vanilla extract 1 cup cashew pieces Directions: Preheat oven to 350 degrees. Grease a 13" x 9" baking pan. In a medium bowl, sift together flour, baking powder, and salt; set aside. In large saucepan, melt butter over low heat. Remove from heat and stir in sugar, eggs, flour mixture, and vanilla; mix well after each addition. Spread batter in prepared pan. Sprinkle evenly with cashews. Bake at 350 degrees for 25-30 minutes or until golden brown and edges begin to pull away from sides of pan. Cool on wire rack before cutting. Cut into 2" squares. Yield: 24 |
