Carrot Cookies

Ingredients:

3/4 cup shortening

1/4 cup butter, softened

1/2 cup granulated sugar

2 eggs, at room temperature

1 cup mashed cooked carrots

2 cups all-purpose flour

2 teaspoons baking soda

1/2 teaspoon salt

3/4 cup shredded coconut

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

Directions:

Preheat oven to 375 degrees. In a medium bowl, mix shortening, butter, sugar and eggs. Add carrots. Blend in flour, soda and salt. stir in coconut, nutmeg and cinnamon.

Drop dough by teaspoonful on lightly greased baking sheet about 2" part. Bake at 375 degrees for 8-10 minutes or until no imprint remains when touched. Cool and sprinkle with confectioners' sugar or frost with Orange Butter Frosting.
