Cake Doughnuts

Ingredients:

2 1/4 cups all-purpose flour

1/2 cup nonfat dry milk powder

1/2 cup granulated sugar

1 tablespoon baking powder

3/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

3/4 cup shortening

2 eggs, at room temperature

1/4 cup plus 1 tablespoon milk

2 teaspoons vanilla extract

oil for deep-fat frying

Directions:

In a large bowl, combine the flour, milk powder, sugar, baking powder, salt, cinnamon and nutmeg; cut in shortening until crumbly. In a small mixing bowl, combine eggs, milk and vanilla; stir into doughnut mix just until moistened. Turn dough onto a floured surface; knead 15-20 times. Pat dough out to 1/2" thickness. Cut with a floured 3" doughnut cutter.

In an electric skillet or deep-fat fryer, heat oil to 375 degrees. Fry only a few doughnuts at a time so they will not stick together. Fry about 1 1/2 minutes on each side or until golden brown. Drain on paper towels. Dust with confectioners' sugar. Serve warm. Yield: 12 donuts
