Cabbage & Apple Salad

Ingredients:

1 red apple

1 green apple

3 teaspoons lemon juice

2 cups cabbage, finely chopped or grated

4 tablespoons plain yoghurt

1/2 cup mayonnaise

1-3 teaspoons granulated sugar, if needed

2 teaspoons sunflower seeds

4 lettuce leaves

Directions:

Wash and core the apples, but do not peel them. Slice into cubes. Sprinkle with just enough lemon juice to prevent discoloration.  Add the apple to the cabbage and mix lightly with a fork.

For the dressing, mix the yogurt, mayonnaise, and sunflower seeds. Add 1-3 teaspoons sugar if too tart.

Pour the dressing over the cabbage and apple, toss the salad and spoon into a container with a lid. Chill for at least two hours or longer before use.

Serve the salad on the lettuce leaves.

Yields: 4-6 servings
