Butterscotch Meringue Pie

Ingredients:

baked 9" pie shell

1/3 cup all-purpose flour

1 cup brown sugar, firmly packed

1/4 teaspoon salt

2 cups milk, scalded

3 egg yolks, beaten slightly

3 tablespoons butter

1/2 teaspoon vanilla extract

Directions:

In a medium saucepan, mix flour, sugar and salt; gradually add milk. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Cook 2 minutes and remove from heat.

In a small bowl, add small amount of milk mixture to egg yolks, stir this into the hot mixture; cook 1 minute, stirring constantly. Do not let it scorch. Add butter and vanilla; mix and then cool slightly. Pour into pastry shell and cool. Top with meringue. Bake at 350 degrees for 12-15 minutes, or until peaks of meringue are golden brown.
