Butterscotch Banana Splits

Ingredients:

1 cup heavy cream

6 tablespoons butter

1/3 cup packed light-brown sugar

3 tablespoons light corn syrup

2 tablespoons granulated sugar

8 ripe bananas, peeled and split lengthwise

2 pints of your favorite ice cream (French vanilla, chocolate, maple nut, etc.)

1/2 cup crushed pecans

8 maraschino cherries

Directions:

In a small saucepan, combine 1/3 cup cream, butter, brown sugar and corn syrup. Over high heat, bring the ingredients to a boil for about 2-3 minutes or until sugar has dissolved, stirring occasionally. Let sauce cool to room temperature.

In a mixing bowl, whip the remaining 2/3 cup cream and granulated sugar until soft peaks form.

In each of 8 shallow dishes, arrange 2 banana halves lengthwise. Place 2 scoops ice cream on bananas. Top with butterscotch sauce, whipped cream, pecans and a cherry.
