Broiled Salmon with Lemon Mayonnaise

Ingredients:

4 salmon fillets (about 1 1/2 pounds total)

1/2 cup mayonnaise

2 tablespoons chopped parsley

1/4 teaspoon salt

1/4 teaspoon crushed black pepper

1 lemon

Directions:

Preheat broiler.  Line broiler pan with foil and lightly grease.  Place the salmon fillets skin down on foil.

In a small bowl, combine mayonnaise, parsley, salt and pepper. Grate lemon to make 1 teaspoon lemon zest and squeeze lemon to make 2 tablespoons juice. Add this to the mayonnaise mixture and stir well.

Spread half of the mayonnaise mixture on the top of the salmon fillets. Broil fillets 4 inches from heat until the topping is golden, about 10 minutes. Serve salmon with the remaining mayonnaise on the side.

Option # 2 - Instead of making the mayonnaise dressing, place the salmon in a glass baking dish with 3 tablespoons raspberry vinaigrette dressing and refrigerate for 30 minutes to marinate. Broil as per directions above.

Option # 3 - Create a copycat version of Applebee's Garlic Butter for salmon, by brushing the raw salmon filets with melted butter. Shake salt, pepper and granulated garlic over the butter. Broil as per directions above. When ready to serve, brush with garlic butter.
