Broccoli-Apple Salad

Ingredients:

6 cups fresh broccoli florets

1 1/2 cups cubed cheddar cheese

1 large red apple, cored and cubed

1 cup coarsely chopped pecans

1 small red onion, chopped

1/2 cup red wine vinaigrette

1/2 teaspoon lemon juice

Directions:

In a large salad bowl, combine the broccoli, cheese, apple, pecans and onion. In a small bowl, combine vinaigrette and lemon juice; drizzle over salad. Toss to coat. Serve immediately. Yield: 8-10 servings
