Breakfast Burritos

Ingredients:

6 eggs

1/4 cup chopped spinach

2 tablespoons hazelnuts, chopped

1 tablespoon sliced almonds

1/4 teaspoon salt

1/4 cup Parmesan cheese, shredded

6 small tortillas

mayonnaise, for serving

Directions:

Preheat oven to 325 degrees. In a medium bowl, combine eggs, spinach, hazelnuts, almonds and salt; blend well and prepare for cooking.

While eggs are cooking, heat tortillas in oven for approximately 5 minutes.

Pour egg mixture into a large non-stick skillet, cooking over medium heat until eggs are set. Remove from heat and let sit for 2 minutes. Add shredded cheese and stir.

Spread each tortilla with a thin layer of mayonnaise. Fill each tortilla with egg mixture, wrap and serve immediately.

Yields: 6 servings.
