Blender Tomato Juice

Note: Select as many tomatoes as you want to work with in one day; wash and quarter the tomatoes, but do not peel them. Put the tomatoes in a blender and puree; pour through a colander. Press juice and the pulp through.

Ingredients:

1 gallon tomato puree

1/4 cup vinegar

Directions:

In a large pot, mix the tomato puree and vinegar. Boil until the foam is almost gone, about 15-20 minutes. Pour into hot, sterilized jars; seal each jar.

The juice stays red and does not separate.
