Beef Enchiladas

Ingredients:

1 pound ground beef

1 cup cottage cheese

1 can (4.25 ounces) black olives, drained & chopped

2 tablespoons fresh parsley, chopped

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon crushed black pepper

8 flour tortillas (8" size)

1 medium onion, chopped

1/2 medium green bell pepper, chopped

1 tablespoon cooking oil

1 can (15 ounces) tomato sauce

1 can (4.5 ounces) chopped green chilies

2 tablespoons chili powder

1 teaspoon granulated sugar

1/2 teaspoon garlic powder

1 cup shredded cheddar cheese

Directions:

In a medium skillet, brown the ground beef and then drain it. Add cottage cheese, olive, parsley, garlic, salt and pepper. Place about 1/3 cup of the filling in each tortilla; roll it up. Place tortillas seam side down in an ungreased 9" x 13" baking dish.

For the sauce, saute onion and green pepper in oil until tender. Add tomato sauce, green chilies, chili powder, sugar and garlic powder. Pour over tortillas.

Cover and bake at 350 degrees for 30 minutes. Sprinkle with cheese and return to oven for 5 more minutes. Yields 4 servings.
