Banana Nut Bread

Ingredients:

1 stick butter, melted

1 cup granulated sugar

2 eggs, at room temperature

4 very ripe bananas, mashed

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla extract

1 cup crushed pecans

Directions:

Preheat oven to 350 degrees. Grease bottom of 8" x 4" loaf pan. In a large bowl, cream butter and sugar until light and fluffy. Add eggs and mix well. Add bananas, then flour, soda, salt, vanilla and nuts. Stir just until dry ingredients are moistened. Pour into prepared loaf pan. Bake at 350 degrees for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan for 5 minutes; remove. Cool completely on wire rack.
