Banana Meringue Pie

Ingredients:

baked 9" pie shell

1/3 cup all-purpose flour

2/3 cup granulated sugar

1/4 teaspoon salt

2 cups milk, scalded

3 eggs, separated

1/4 cup butter

1 teaspoon vanilla extract

3 bananas, sliced

Directions:

Preheat oven to 350 degrees. In a medium saucepan, combine flour, sugar and salt. Blend scaled milk in slowly. Cook, stirring constantly, over medium heat until mixture thickens and boils. Continue cooking and stirring for 1 minute.

Remove from heat and add a little hot mixture to beaten egg yolks. Quickly stir into mixture in saucepan. Return to medium heat and cook, stirring constantly, for 3 minutes or until it thickens again and mounds slightly.

Remove from heat and add butter and vanilla, stirring until butter is melted. Cool while you make your meringue.

Slice peeled firm bananas into pie shell, making an even layer. Pour lukewarm filling over bananas. Spoon meringue over filling and spread over top, making sure it touches inner edges of crust all around pie. Bake at 350 degrees for 12 minutes, until peaks of meringue are golden brown.
