Banana Jam Cake

Ingredients:

1 cup blackberry jam

2 cups granulated sugar

4 ripe bananas

2 sticks butter

4 eggs, at room temperature

1 package mincemeat

1 cup raisins

1 cup shredded coconut

1 cup chopped pecans

3 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon allspice

1 teaspoon crushed cinnamon

1/2 teaspoon cloves

1/2 cup buttermilk

1 teaspoon soda

Directions:

Preheat oven to 250 degrees. In a large mixing bowl, cream together the jam, sugar, bananas, butter, eggs, mincemeat, raisins, coconut and nuts. Add flour, baking powder, salt, allspice, cinnamon and cloves; mix well. Add buttermilk and soda and mix again.

Pour into 13" X 9" baking dish and bake at 250 degrees at three hours or until done.
