Banana Cake |
Ingredients for the cake: 1 1/2 cups mashed bananas 2 teaspoons lemon juice 3 cups all-purpose flour 2 teaspoons baking soda 1/4 teaspoon salt 3/4 cup butter 2 1/8 cups granulated sugar 3 eggs 2 teaspoons vanilla extract 1 1/2 cup buttermilk Directions: Preheat oven to 300 degrees. In a small bowl, mix bananas with lemon juice. Set aside. In a medium bowl, mix flour, soda and salt. Set aside. In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla. Beat in the flour mixture alternately with the buttermilk. Stir in the banana mixture. Pour batter into a greased and floured 9" x 13" baking pan OR three round pans. Bake at 300 degrees for 1 hour, or until a toothpick inserted into the center of the cake comes out clean. Place on rack to cool. Ingredients for the frosting: 1/2 cup butter, softened 1 package (8 ounces) cream cheese, softened 1 teaspoon vanilla extract 3 1/2 cups confectioners sugar Directions for frosting: In a large bowl, cream the butter and cream cheese until smooth. Beat in vanilla. Add sugar and beat on low speed until combined and then increase to high speed until frosting is smooth. Spread on cooled cake. |
