Banana-Nut Green Salad

Ingredients:

1 tablespoon vegetable oil

1 teaspoon soy sauce

1/4 teaspoon salt

1/4 teaspoon ground ginger

1/8 teaspoon onion powder

1 cup walnut halves

1/3 cup orange juice

1/4 cup lime juice

1/4 cup vegetable oil

1/2 teaspoon salt

1/8 teaspoon crushed black pepper

12 cups of mixed salad greens, using a variety of lettuces

4 medium firm bananas, cut into 1/2" slices

2/3 cups crumbled blue cheese

Directions:

In a bowl, combine 1 tablespoon oil, soy sauce, salt, ginger and onion powder. Add walnuts; toss to coat. Transfer to an ungreased baking sheet. Bake at 300 degrees for 18-20 minutes or until nuts are lightly browned and evenly coated, stirring every 5 minutes. Set aside when finished.

In a small bowl, whisk the orange juice, lime juice, 1/4 cup oil, salt and pepper.

In a large bowl, combine the lettuces and bananas. Drizzle with dressing; toss to coat. Sprinkle with cheese and toasted walnuts. Serve immediately. Yield: 8-10 servings
