Bacon & Double Cheese Quiche

Ingredients:

baked 9" pie shell

10 strips bacon

4 large eggs, at room temperature

1 1/2 cups light cream

1/4 teaspoon dried thyme

1/8 teaspoon crushed black pepper

1/2 cup shredded Gruyere cheese

1/2 cup shredded white Cheddar cheese

Directions:

Preheat oven to 375 degrees. In a medium skillet, cook the bacon over medium heat for 8-10 minutes or until crisp. Transfer to a paper towel to drain.

In a small bowl, whisk together the eggs, cream, thyme and pepper. Pour into crust. Crumble bacon. Sprinkle the egg mixture with the bacon and both cheeses. Bake at 375 degrees for 30 minutes or until golden and custard is set. Serve warm.

Note: this quiche is great for breakfast, but paired with a tossed green salad it makes an excellent lunch, too.
