Apple Pudding Cake |
Ingredients for Cake: 2 cups apples, peeled, cored & sliced 1 cup granulated sugar 1 cup all-purpose flour 1 teaspoon baking soda 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1 egg, whisked 1/2 cup pecans, chopped Directions for Cake: Preheat oven to 350 degrees. Lightly mist an 8" pan with non-stick vegetable oil spray. Combine the apples and sugar and allow to rest for 10 minutes. Combine the flour, baking soda, and spices in a mixing bowl. Stir the egg into the apples. Add the dry ingredients and nuts and stir until blended. Pour the batter into the prepared pan and bake for 35-40 minutes or until the cake is lightly golden around the edges and firm to the touch. While the cake is cooling, prepare the icing. Ingredients for Icing: 1/4 cup brown sugar 1/4 cup granulated sugar 1 heaping tablespoon all-purpose flour 1/2 cup water 4 tablespoons butter 1/2 teaspoon vanilla extract Directions for Icing: Combine the sugars and flour in a small sauce pan. Whisk in the water and cook the mixture over medium heat, stirring the entire time until the mixture is thick. Remove the pan from the heat, whisk in the butter and vanilla. Pour the topping over the hot cake. Allow cake to cool for 15 to 20 minutes before serving. |
