Apple Pecan Cake |
Ingredients: 2 eggs, at room temperature 1 cup granulated sugar 2/3 cups cooking oil 1 1/2 cups all-purpose flour 2 cups fine cut raw apples, with peeling 1 cup chopped pecans 1 teaspoon vanilla extract 3/4 teaspoon baking soda 1/3 teaspoon salt Directions: Preheat oven to 325 degrees. Grease 9" x 13" baking dish. In a medium bowl, beat eggs and mix with sugar. Add oil, flour, vanilla, soda, salt and pecans; mix well. Add apples and pecans and mix again. Pour into greased pan. Bake at 325 degrees for 50 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. |
