Apple-Walnut Spiced Muffins |
Ingredients: 1 cup raisins 2 cups all-purpose flour 1 cup oatmeal 2/3 cups granulated sugar 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon allspice 1/4 teaspoon ground nutmeg 5 small apples, peeled and cored 1 egg 2 egg whites 1/4 cup cooking oil 1/2 cup walnuts, chopped Directions: Preheat oven to 350 degrees. Grease muffin tins for making 12 muffins. Pour hot water over the raisins in a small bowl and let sit for 10 minutes; drain well and set aside. In a medium mixing bowl, combine flour, oatmeal, sugar, baking powder, salt, cinnamon, allspice, and nutmeg. Stir and toss to combine; set aside. Grate the apples coarsely to make 2 generous cups, lightly pressed down. Combine apples, egg, egg whites, oil, walnuts and raisins. Beat together to blend well. Add to combined dry ingredients. Stir until blended and moistened. Note: the batter will be very stiff. Spoon into prepared muffin tins, filling about 3/4 full. Bake at 350 degrees for 20-25 minutes. Cool 5 minutes in pan; remove and serve warm. |
