Angel Hair Pasta with Chicken

Ingredients:

2 tablespoons olive oil, divided

3 skinless, boneless chicken breast halves, cut into 1" cubes

1 carrot, sliced diagonally into 1/4" pieces

1 package (10 ounces) frozen broccoli florets, thawed

2 cloves garlic, minced

1 package (12 ounces) angel hair pasta

1 cup chicken broth

1 teaspoon dried basil

1/4 cup grated Parmesan cheese

Directions:

In a medium skillet, heat 1 tablespoon oil over medium heat; add chicken. Cook for about 5 minutes, stirring, until chicken is cooked through. Remove from skillet and drain on paper towels.

Heat the remaining oil in the same skillet. Begin heating the water in a pot for the pasta. Add carrot to the skillet; cook, stirring, for 4 minutes. Add broccoli and garlic to skillet; cook, stirring, for 2 minutes longer.

Cook the pasta according to the package directions. While the pasta is cooking, add the chicken broth, basil and Parmesan to the skillet. Stir to combine. Return the chicken to the skillet. Reduce the heat and simmer for 4-6 minutes.

Drain the pasta. Place in a large serving bowl. Top with chicken and vegetable mixture. Serve immediately.
