Ingredients: 1 cup butter, at room temperature 1 cup firmly packed brown sugar 1 cup granulated sugar 2 eggs, beaten 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup shredded coconut 1 1/2 cups uncooked rolled oats 1 cup chopped pecans 1 cup seedless raisins 1 cup chopped dates 1 tablespoon grated orange rind 1 tablespoon grated lemon rind Directions: Preheat oven to 350 degrees. In large bowl, cream butter. Gradually add both sugars and cream well. Add eggs and vanilla extract. In second bowl, sift flour, baking powder, soda and salt together. Stir dry ingredients into creamed mixture, beating until smooth. Add remaining ingredients. Mix thoroughly. Drop from teaspoon onto baking sheets. Bake for 12 minutes at 350 degrees. Let cool in pan for two minutes and then remove to wire rack to finish cooling. |
