Almost Famous Pear Cake

Ingredients:

1 1/2 cups granulated sugar

1 cup (2 sticks) butter, softened

2 eggs, at room temperature

2 cups all-purpose flour

2 teaspoons crushed cinnamon

2 teaspoons baking soda

1 teaspoon salt

2 cups pears, pureed

1 cup walnuts, chopped

1/2 cup brown sugar

vanilla ice cream

Directions:

Preheat oven to 350 degrees. Cream sugar, butter and eggs, then add the flour, cinnamon, baking soda and salt. Fold pureed pears into cake mixture and pour onto 8" x 8" baking pan. Top with nuts and brown sugar. Bake at 350 degrees for 30-40 minutes.

Serve warm, with a scoop of ice cream.
