Cinnamon Buttercream Frosting

Ingredients:

1 stick (8 tablespoons) butter, at room temperature

3 3/4 cups confections sugar

3-4 tablespoons milk

1 teaspoon vanilla extract

2 teaspoons ground cinnamon

Directions:

In medium mixing bowl, blend butter on low speed until fluffy. Stop machine and add confections sugar, 3 tablespoons milk, vanilla and cinnamon. Blend on slow speed until the sugar is incorporated. Increase the speed to medium and beat until light and fluffy. Blend in up to 1-2-3 teapoons more of milk if the frosting seems too stiff.

Spread over 13" x 9" cake.  If using two 9" round cakes, frost a thin layer on one cake; add second cake on top and then cover the top and sides with the frosting.

For a special topping for the cake, mix 2 tablespoons granulated sugar with 2 tablespoons cinnamon and sprinkle over the top of the cake.
